No Fire Required S’mores Bars Coming at You!

This recipe was inspired by The Pioneer Woman (Ree Drummond) and her “No-Bake S’mores Bars”! Because of quarantine and the ‘rona, some modifications had to be made based on availability, but let me tell you, OMG YUM!
This weekend kicks off the unofficial start of summer, and really, does anything scream American Summer like a toasty, ooey, gooey S’mores? I think not. In the case that you don’t have access to a fire pit, or are like me and really prefer to stay awayyyy from fire whenever possible, this No Fire Required S’mores Dessert replicates that feeling of biting into a delicious S’mores on a summer’s eve.
Ingredients:

Nonstick spray (for the pan!)

4 tablespoons of butter

One 10 ounce bag of mini marshmallows

One 12 ounce bag of semisweet chocolate chips (I used Enjoy LIfe Brand)

Pinch of salt

~9 Gluten-Free Cookie of choice! (Because I could not find GF graham crackers, which is what this recipe originally called for, I used GF chocolate chip shortbread cookies instead and WOW did they turn our incredible! This is where you can get creative and use whatever cookie option you like!)

1/4 cup mini chocolate chips

Rainbow Sprinkles (or toppings of choice)
Directions:

Line a 9 inch square baking pan with waxed paper & spray with cooking spray.

In a saucepan, meltdown butter. Once melted, add in 2/3 of marshmallows and stir to meal down and combine with the butter. Next, fold in the chocolate chips and stir until melted and combined as well. Add the salt + half of the cookies and stir until well incorporated.

Pour the mixture into the lined and greased pan and press into the pan with a wooden spoon (will likely be a thick mixture). Sprinkle remaining cookies and marshmallows over top, gently pressing them down so they set into the base. Add the additional chocolate chips and sprinkles and press them down as well.

Allow bars to set for ~1 hour before removing from the pan. Cut into bars. Chill for 10 minutes OR or straight to ENJOYING!
