Cast-Iron Brownie & Berry Pizza Dessert
(Gluten-Free option)
Not even going to lie…this cast-iron brownie & berry pizza with cream cheese frosting is one of the simplest and best ways to dress-up a boxed brownie mix! It’s so easy, yet delicious, and it will have guests (or even just your family!) in so much awe over how fancy it looks and how good it tastes! While there is nothing wrong with a good ‘ole batch of boxed brownies, sometimes it’s fun to spice them up a bit and fancify this go-to staple (at least in my house, boxed brownies are always a go-to!).
INGREDIENTS:
-
1 box of your favorite store-bought brownie mix (I use Betty Crocker Gluten Free Brownie Mix)
-
Additional ingredients boxed mix requires (Such as eggs, or butter, etc.)
-
1 package of cream cheese, softened
-
1/3 cup sugar
-
1/2 teaspoon GF vanilla
-
~1 cup mixed fruit of choice (I used chopped up strawberries, blueberries, and kiwi)
DIRECTIONS:
-
Heat oven to temp on brownie box (likely 350 F). Grease the bottom of a cast-iron skillet.
-
In a large bowl, make brownie mix per directions on the box. Spread into the cast-iron skillet evenly.
-
Bake per directions (approximately 18-20 minutes or until a toothpick comes out clean from the center).
-
Cool completely (~1 hour) before continuing on.
-
In a small bowl, beat softened cream cheese, sugar, and vanilla together with an electric mixer until smooth. Spread over cooled brownies. Add berries/fruit in any arrangement you desire.
-
Refrigerate about 1 hour until chilled, or slice right in and ENJOY!
