Oh baby! Welcome back to the blog! As you may have seen on instagram (@fueling.former.atheletes), every Sunday we have honored our food freedom by showing off a different sweet treat. While the connotation of “treat” is often “something on special occasions” or “something as a reward,” we want to rebuild our thoughts about treats to instead mean “something that brings joy.” I challenge you to either make or buy a treat this week and allow yourself to have it whenever the treat sounds good!
This week’s sweet treat is…..✨Strawberry & Blackberry Cheesecake✨
What you’ll need is:
a box of graham crackers
~1/2 stick of melted butter
8 oz softened cream cheese
1/2 cup brown sugar
1/4 cup vanilla greek yogurt
salt
vanilla extract
pureed strawberries
blackberries (or really any other fruit)
Even treats have important nutrients! Cream cheese and greek yogurt are great sources for protein, necessary for your body’s cellular health. Strawberries and blackberries are high in vitamin C, which is important for supporting immune health. Blackberries also are high in fiber, which helps your body digest easier and regulate your blood sugar. Blackberries have both soluble and insoluble fiber. Soluble fiber helps feed the “good” bacteria in your digestive track which helps promote gut health and a strong immune system. I could go on about how each of the ingredients helps your body, but I’ll leave the rest of that to Katie’s coaching.
Anyways, here’s how you make the treat:
STEP 1: Preheat the oven to 350F
STEP 2: Crush up about 1.5 cups of the graham cracker of your choosing
STEP 3: Combine melted butter with crushed graham crackers until the mixture sticks together and is no longer “dusty”
STEP 4: Press graham cracker mixture into a 8×8 baking dish
STEP 5: Bake for 8-10 minutes
STEP 6: In a medium bowl, mix together the softened cream cheese, yogurt and brown sugar. (I like to use a mixer for this step.) Add in a pinch of salt and a little vanilla extract and mix until well combined.
STEP 7: Spread over crust
STEP 8: Use a blender to puree strawberries (or use a store-bought version) and pour over the cream cheese mix. Lightly swirl into mixture with a knife.
STEP 9: Top with blackberries (or other fruit(s)) and chill for 2-4 hours!
